Templates are quick and cheap up front, but they limit you later. Every business bends to fit the theme. A custom Laravel build does exactly what you need, loads faster, and doesn't rely on a stack of third-party plugins that can break or slow the site. If a template genuinely suits you, I'll say so.

Do you only build large, expensive projects?

Can you take over a site another developer built?

Often, yes. I regularly inherit existing websites and applications, audit the code, and either maintain or rebuild them. If it's a standard platform in reasonable shape I can pick it up. If it's beyond saving I'll explain why and what a rebuild involves.
